One of the biggest fears for breastfeeding moms is supply issues. There is always the worry that you will not make enough milk to feed your little one. But did you know that there are a few foods that help with milk supply?

I was super excited to try Snappy Snacks lactation cookies, because I love cookies and I love finding out about awesome products by moms, for moms. I do not have supply issues, but since I have started running I have noticed a bit of a decrease in my supply so I thought it was a great time to try out these cookies. Oh my goodness, not only were the cookies easy to make they were also soft and yummy. Like the perfect oatmeal chocolate chip cookie. I started eating 2-3 cookies a day (because I run now so I totally can do that), and I could not believe how much my milk supply went up. I had finally gotten to the point that my supply was regular and I was not leaking and BAM there was milk everywhere. I was highly impressed with these cookies and their magical milk powers.

cookiesI think these will be one of my go to gifts for baby showers. I mean who doesn’t want to receive cookies?? And since all of the dry ingredients are all mixed up it is really easy for a new mom to throw the mix in a bowl with the butter, egg, and vanilla and quickly make up a batch of cookies. Or you can make them up for the new mom and take them over with a magazine for her to read while nursing and munching.

Mango “Ice Cream”

The girls and I made mango ice cream today. It was super easy and they loved helping. Well Payson loved snuggling in my arms while the food processor was going because it was too loud.

All we did was take some frozen mango we had and put it in the food processor until it was a good ice cream texture. It took a little over 5 minutes, and we had to scrap down the sides a few times. Capri did a great job loading the frozen bits in and scrapping the sides. And Payson helped put some pieces in as well and did a great job.

It was a quick and healthy treat and the girls loved helping. I am hoping to do more with them in the kitchen this year because they both love helping.

Zucchini Muffins and Bread

Last Summer I finally discovered the joy of zucchini. Our farmers market was selling HUGE zucchini for $1 each and once HAND grated I would have around 6-8 cups PER zucchini. It was awesome, except the hand grating part. So over the Winter I bought a food processor to help with the grating.

So the last couple of Farmers markets I have picked up a few zucchini, though it is early in the season so they are not very big. It took 5 small zucchini to get 9.5 cups worth of grated zucchini. But I really wanted to make muffins to take with us to our camp ground in 10 days, so I sucked it up and bought them.

breadI found a really good zucchini recipe on All Recipes last year and using some of the comments to help tweak the recipe to be perfect I have made amazing muffins and bread. They are moist and wonderful. When you grate your zucchini you will wonder how it will taste with such large/long pieces but as they bake they melt into the bread and you can hardly even see them.

Out of one batch of mix I was able to make 12 regular muffins, 12 mini muffins, and a small loaf of bread. The muffins have been put in the freezer so we can take them to camp, but the bread has been enjoyed throughout the day. I like it best with a good slab of butter on it.

frozenIt is important to note that once you grate your zucchini do not DRAIN it, or PAT it dry. You want all the extra moisture that comes with it. It makes your bread and muffins so perfect. I froze the leftover grated zucchini. Just take it out and thaw and mix into your next batch of muffins (remember NO DRAINING). I just freeze it in 2.5 cup amounts.

So I will put the recipe that I have tweaked below so you can make your own bread and muffins. I hope you enjoy.

Zucchini Muffins and Bread

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
3 teaspoons vanilla extract
2.5 cups grated zucchini

Heat your oven to 325 degrees F.

Mix all your ingredients together. I use my Kitchen Aid.

Spoon into muffin tin (I spray my tins so they are nice and greased)

Or pour into a greased bread pan

Bake the muffins for 15-25 minutes (mini muffins take less time). When a tooth pick comes out clean they are done.

Bake Bread 40-60 minutes (depending on how full you fill your pan). When a tooth pick comes out clean it is done.

Take them out and slather with butter and enjoy!!

Brownies with Oreos

Follow the pictures to an end result of yummy goodness

Collect your ingredients

A box of brownie mix + the egg and oil you will need

Milk

Oreos

Mix your brownies together

Pour HALF the brownie mix in the pan

Dip Oreos in milk quickly

Place milk-soaked Oreos on mix

Pour remaining batter over top Oreos

Place in oven and bake

Let Husband lick bowl

Drink remaining milk

Let cool..YUMMY

I don’t want to be a hobbit mom


There I sat in the Toronto Airport on Christmas Eve and of course my flight was a few hours late, when aren’t my flights delayed? As I sat there with Stefan we have fun by observing people and seeing how they act in public. The best people to watch are parents because they are at their wits end and are pretty testy with their children. While we were sitting there we witnessed a mom yelling at her five year old son very loudly and nastily enough that everyone in the area turned to watch this happen. I told Stefan that I never want to be one of those moms (later referring to her as the hobbit mom). If I cannot control myself in public (and private) with my children especially when they are probably super tired and just want to be in their beds, then I need to take a step back and look at how I am acting. I then saw another mom with her little girl who was playing with her and even though the little girl was whiney, she never lost her cool but allowed her daughter time to be a little grumpy at this late hour. I hope that someday when I have kids (whenever that blessed day comes) that I will remember that they have short attention spans and don’t do well late at night after long trips. I need to remind myself that I also get a little whiney and grumpy at this point in trips and need to entertain myself and my kids the best I can (Stefan comes in handy when entertainment is needed).
